: Your question is important and beautiful It is important that you know that you should not allow a gardener to do his work in your garden on Shabbat. Even though he is a non-Jew and he works on the Sabbath because that way it is convenient for him and you do not tell him when to work, you should not allow him to work on the Sabbath, since he works in your garden and does it for you. Therefore, ask him to do all the work on weekdays. Apart from this, the very fact of telling a non-Jew on Shabbat what to cut and what to harvest is forbidden because it is forbidden to tell a non-Jew to do a malacha from the torah of katzer on Shabbat.
