Answer:
If you are buying a liver that is not roasted, you must roast it within 72 hours of ‘shechita’, so that you can then cook or fry the liver after.
But even if it’s been 72 hours since slaughter until the liver is roasted, you can still eat the roast liver rousted, without cooking or frying after.
It is important to note that in the opinion of Rabbi Ovadia Yosef z”l, if the liver has been frozen, the freeze stops the 72-hour count. So if you bought a liver that was frozen within 72 hours of slaughter, you can remove it from freezing and immediately roast it, and then you can cook it as well.
In some ‘hechsherim’, they make sure to specify the day and time of slaughter, so that you can calculate when the 72 hours pass from the time of slaughter, note that.
