: If you are buying a liver that is not roasted, you must roast it within 72 hours of ‘shechita’, so that you can then cook or fry the liver after. It is important to note that in the opinion of Rabbi Ovadia Yosef z”l, if the liver has been frozen, the freeze stops the 72-hour count. So if you bought a liver that was frozen within 72 hours of slaughter, you can remove it from freezing and immediately roast it, and then you can cook it as well.
