I heard there’s a segulah for a girl who is having trouble finding a suitable shidduch: she should buy a large tallit for her future groom. Is this true?
Yes, there is such a segulah, as you wrote. The tallit should already have the tzitzyot tied, and the girl should place it in her closet. It is also appropriate for her to pray to Hashem when buying the tallit. For example, she may say something like:
“Master of the world, by Your grace I have trusted and bought a proper tallit to give to the groom that You, in Your mercy, will send me. Please, God, do not let me be shamed; act with free kindness toward me and arrange for me a worthy shidduch quickly. Amen, Selah.”
PLEASE NOTE*
Attention: You should not learn from one case to another, each case must be analyzed individually. Generally speaking, it's always best to have contact with a Rabbi in person, not just virtual contact. Note that where there is a local Rabbi("Mara Deatra"), one should ask him. The answers are under the responsibility of the rabbi who responded, and not under the responsibility of the website and/or the Head of the Institution.

It does not make sense as a Tallis is not cheap, and there are so many different sizes, as well as many different minhagim. How could she possibly know which one to buy?
Buy a medium size, and the groom will wear it under the veil and also for a day or two during the prayer, then buy another one in the exact size. I know it’s not cheap, but there are virtues that cost money, it’s not a must, it’s a virtue for those who want it.
